D-isoascorbic acid is a natural, green and highly effective food antioxidant, which plays a considerable role in improving the stability of food and extending the storage period. As an isomer of Vc, D-isoascorbic acid has many similarities in chemical properties with Vc, but as an antioxidant, it has advantages that Vc does not possess. First of all, its oxidation resistance is better than that of Vc. Therefore, when used with VcChemicalbook, it can effectively protect the medicinal components of Vc, and has a good effect in improving the medicinal properties, while protecting the color of Vc. Second, the safety is high, there is no residue in the human body, and the body participates in metabolism after ingestion, which can be partially converted into Vc.
